Rufina Maguey Espadín is a high-quality agave spirit from Espadín agave plants harvested at 7-8 years. It undergoes a traditional production process, including extraction with a machete and shredder, horizontal distillation in a copper still pot, and cooking in a conical oven with various kinds of wood. Fermentation uses native yeast and water from basins and cypress wood vats.
