Built on Hillrock’s signature estate-to-bottle philosophy, this expression takes their acclaimed rye a step further with a finishing period in Pedro Ximénez (PX) sherry casks — some of the sweetest, most aromatic casks in the world — resulting in a whiskey of exceptional depth and complexity.

Tasting Notes

Deep amber in color with an inviting nose of dried fig, raisin, dark chocolate, and toasted oak. The palate opens with bold rye spice — black pepper, clove, and cinnamon — beautifully balanced by waves of PX-driven sweetness: medjool date, molasses, and caramelized plum. The finish is long, warming, and velvety, with lingering notes of espresso and dried fruit.
